Ingredients

  • 1 lb lean ground turkey 93% lean (454 g)
  • 2 cups oat flour about 210 g
  • 1 cup plain canned pumpkin not pie filling (about 245 g)
  • 2 large eggs
  • 2 to 4 tablespoons water as needed

Method

  1. Heat the oven to 350°F (175°C) and line a large baking sheet with parchment.
  2. Cook the turkey in a pan until no pink remains, drain any fat and let it cool slightly.
  3. Blend or mash the turkey with the pumpkin and eggs until fairly smooth.
  4. Stir in the oat flour, adding water a spoonful at a time, to make a thick, spreadable dough.
  5. Spread the dough about 1/4 inch thick across the baking sheet.
  6. Bake 25 minutes, then score into 1/2-inch squares with a knife or pizza cutter.
  7. Lower the oven to 200°F (95°C) and dry the pieces 2 to 3 hours, turning once, until they snap when cooled.
  8. Cool completely before storing.
